Appassimento Rosso di Negrar Domini Veneti is the result of drying native red grapes: 60% Corvina, 15% Corvinone, 15% Rondinella and other local varieties for the remaining 10%. The vineyard, trained in a pergola and covered with grass, is located on the Veronese hills at an altitude of 100 to 350 meters above sea level, on predominantly clayey and sometimes calcareous soil. The harvest takes place at the end of September with exclusively manual selection of the grapes. The bunches are dried for 60 days, to obtain a greater concentration, then they are pressed and destemmed. The must ferments at 25° and the maceration proceeds for 10 days with 3 punchings scheduled per day. After malolactic fermentation, the wine ages in wood.
APPASSAMENTO ROSSO NEGRAR DOMINI VENETI: TASTING
Appassimento Rosso di Negrar Domini Veneti has a beautiful ruby red color with garnet shades. On the nose it is generous in fruit with notes of cherry and raspberry jam, it is spicy with notes of vanilla and cinnamon, and has vegetal references. In the mouth it is full, dense, soft, with velvety tannins and an aromatic profile in line with the olfactory one. Excellent accompanied with local matured and semi-mature cow's milk cheeses, for example from Monte Veronese.
