The Cabernet Sauvignon from Casale del Giglio is produced from 100% Cabernet Sauvignon grapes grown in the Le Ferriere area, in the province of Latina. After the harvest, the grapes were transported to the winery to begin the red winemaking process, which included alcoholic fermentation and malolactic fermentation, the latter smoothing out the aromatic and structural edges of the must. Before commercialization, the Cabernet Sauvignon Lazio IGT from Casale del Giglio aged for 18-20 months in oak barrels and for 8-12 months in the bottle. Cabernet Sauvignon is a grape variety native to the French region of Bordeaux, where it, along with Cabernet Franc and Merlot, produces prestigious reds that are among the most acclaimed in the world.
CABERNET SAUVIGNON CASALE DEL GIGLIO: THE TASTING
The Cabernet Sauvignon from Casale del Giglio presents an intense ruby red color. On the nose, it expresses aromas of raspberry and dark berry fruits intertwined with notes of underbrush and delicate balsamic and dark spice hints. The taste is harmonious and enveloping, characterized by a clear fresh-salty trail that lingers in the finish. At the table, it pairs well with cured meats and semi-aged and aged cheeses as well as with flavorful land-based recipes featuring red meats or game.
