The Pinot Noir Riserva Fallwind from San Michele Appiano is made from 100% Pinot Noir grapes grown in the Appiano area along the Wine Road, in the province of Bolzano. Here, the soils are composed of moraine deposits and limestone gravel, situated at an altitude between 400 and 550 meters above sea level. After a 3-day cold pre-maceration, the must underwent alcoholic fermentation in steel. Once malolactic fermentation was completed, which helps soften the structure and aromatic profile, the wine is aged for 70% in barriques and 30% in large barrels. After blending, it matures for a few more months in large barrels.

The Pinot Noir Riserva from San Michele Appiano Fallwind has a ruby color, and on the nose, it expresses intense aromas of cherry, violet, and seductive balsamic and dark spice notes. Complex and elegant, on the palate it reveals a polished tannic structure and an exhilarating taste balance. The finish is long and persistent. At the table, it pairs well with cured meats and aged cheeses, as well as with first and second courses made with white or red meats or game.
