The Mater Matuta by Casale del Giglio is a wine that it is difficult not to have ever come across. The vines that compose it are 85% Syrah and 15% Petit Verdot. The harvest takes place when fully ripe, sometimes pushing the Syrah towards a slight drying. The two protagonists are processed differently: the Syrah ferments with a submerged cap for a period of 18–20 days, with periodic délestage (operation which consists in emptying the tank where the pressed material (must + pomace) was placed, leaving only the liquid part that the cap of pomace rests on the bottom, and then fills it again). For Petit Verdot, however, punchers are used (punching down is the operation of breaking the cap of pomace which rises to the surface driven by the carbon dioxide produced in the fermentation process, and re-immersing it in the liquid) which allows maximum extraction of tannins and polyphenolic substances. The wines are then placed separately in new barriques for 22–24 months. The blend is followed by a further refinement of 10-12 months in the bottle.
MATER MATUTA CASALE DEL GIGLIO: TASTING
Mater Matuta strikes with its deep and impenetrable ruby; the nose is balsamic, with notes of violet, black cherries in syrup and spicy notes of coriander, cinnamon and nutmeg. The sip is rich in fruit, quite fresh and with well-integrated tannin. Good with grilled lamb.
