Piper-Heidsieck's Champagne Rosé Sauvage is a gastronomic wine, as the company itself likes to define it, a wine that calls for summer evenings in the countryside, with a large grill under the starry sky. It is produced 50-55% from Pinot Noir from the Cote des Bar (of which 20-25% vinified in red), 30-35% from Pinot Meunier and the remaining 15-20% from Chardonnay from the Mountain of Reims. Between 10 and 20% of the cuvée is made up of reserve wines, i.e. wines from previous years.
CHAMPAGNE ROSE SAUVAGE PIPER-HEIDSIECK: THE TASTING
The Champagne Rosé Sauvage by Piper-Heidsieck enchants, sparkling in the glass with a dark ruby pink; on the nose it is raspberry, blackberry, blueberry, with a fresh background of mandarin and elegant hints of saffron. In the mouth it attacks with fruity freshness and flavour, then turning towards smoky notes and lengthening considerably. Perfect with fragrant grilled meats, such as the exotic duck with orange; if instead you want to combine it with the sea, try it with Cacciucco alla Livornese or with octopus gnocchi all'arrabbiata.
