The Alta Langa Blanc de Blancs Extra Brut by Fontanafredda is an elegant sparkling wine made from 100% Chardonnay grapes grown in the Castrino area, in the province of Cuneo. The vineyards, exposed to the East and South-East, stand on soil characterized by white clay interspersed with limestone sand, at an altitude of approximately 600 meters above sea level. In the cellar the bunches were subjected to soft pressing to obtain the must which was left to settle for 12/24 hours at a temperature of 8-10°C. After the alcoholic fermentation which lasted for about 1 month, the wine was refined for a few months in stainless steel. According to the rules of the Classic Method, the sparkling process took place in the bottle where the wine was refined for a period of 30-36 months.

The Alta Langa Blanc de Blancs Extra Brut by Fontanafredda is offered in the glass of a brilliant straw yellow color enhanced by a fine perlage. On the nose it releases aromas of yellow pulp fruit and spring flowers which combine with hints of honey, bread crust and toasted almond. On the palate it is soft and intense, supported by a vertical minerality that persists in the long finish. Perfect as an aperitif, it can be enjoyed at the table with cheeses and vegetarian dishes as well as tasty seafood preparations.
