Obtained with a selection of the best cuvee, initially intended for the production of our black label Gavi dei Gavi® and only in great vintages. This wine, after aging that can last up to ten years, only in steel tanks and on native yeasts, reaches the bottle with that unmistakable intensity and nobility of sensations that only time gives to the Great Wines.
Rare and unique wine, to be tasted meditating on the extraordinary gustatory sensations that bring back to memory, as in the Proustian “Recherche”, the taste of distant memories: the bouquet that is surprising evokes the sea breeze, the minerality of the earth, but also exotic fruits and honey. Only the experience of almost a century of production can give this harmony, where power and finesse come together in a splendid balance, bringing us back to nature and D'Antan® sensations.

Grapes: 100% Cortese
Vinification: in white, cold, partly macerated on the skins; left in contact with native yeasts, of first fermentation (“sur lie”) ) until bottling. Bottled clear, natural, for decanting, without filtration.
Serving temperature: 12° C
Pairings: excellent throughout the meal, for after dinner and for “meditation”. It is enhances in the combination with savory cheeses and meat pâté.

The La Scolca® estate was purchased between 1917 and 1919 by the great-grandfather of the current owner Giorgio Soldati, who now runs the company together with his daughter Chiara Soldati, fifth generation with a look at the third millennium. The past and the future coexist in this company that best combines the naturalness of those who have always lived in this world with the speed of those who look ahead with the foresight of brave captains: never as in the case of the Soldati family do names have a symbolic meaning. The name of the plot derived from the ancient place name “Sfurca” or “Looking Away” and the farmhouse that stood there had in the past been precisely a lookout post. The surname fully reflects the proud and tenacious character of the owners and their wines. Giorgio has proved to be a very valid and whimsical innovative interpreter: his is the creation of successful wines and sparkling wines without ever betraying loyalty to the land of Gavi and to the courteous grape variety. But the most difficult task he took on, together with the family, was to maintain the leadership gained by the company over the years, further strengthening the image and the fame of Scolca with an all-Piedmontese will and the philosophy of the highest possible quality.
