The Chianti Governo all'Uso Toscano by Melini is produced from predominantly Sangiovese grapes with the addition of complementary varieties. The vineyards of origin, trained to a spurred cordon, are developed on soils characterized by the presence of alberese and galestro in the territory of Radda in Chianti (SI). After the harvest, a portion of the bunches was dried in a fruit drying room for about 3 weeks, while the remaining part was vinified in red. After racking, thanks to the addition of the dried grapes, a second fermentation was activated, in accordance with an ancient traditional technique. The aging lasted for several months in stainless steel.

The Chianti Governo all'Uso Toscano by Melini presents a deep ruby red color. On the nose, it unleashes aromas of berries and floral notes of violet and iris. The palate is harmonious and full-bodied, supported by an integrated tannic structure and excellent savoriness. At the table, it pairs well with aged cheeses as well as tasty meat dishes, especially those based on red meats.
