Bertani's Recioto della Valpolicella Valpantena was obtained from Corvina Veronese (80%) and Rondinella (20%) grapes, grown on the hills of Valpantena, north of Verona, on naturally rich marl-limestone and clayey-limestone soils. of iron. After selection and manual harvesting, the bunches were transported to the orchard, where they were arranged in boxes in a single layer to proceed with the drying process which lasted for 150 days. The alcoholic fermentation, which converted the sugars into alcohol, initially took place at a temperature of 4-5°C until reaching 18°C. Before marketing, Bertani's Recioto della Valpolicella Valpantena was aged in 30 hectoliter cherry barrels for 12 months and in the bottle for at least 3 months.
RECIOTO DELLA VALPOLICELLA VALPANTENA BERTANI: THE TASTING
Bertani's Recioto della Valpolicella Valpantena has an intense ruby red color. On the nose it releases aromas of plum, cherry and small ripe berries which combine with notes of cocoa, vanilla and dark spices. The sip is soft and enveloping, exhaled by an elegant and well-integrated sweetness and a pleasant taste played on fruity, spicy and mineral notes. Long and persistent finish. At the table it goes well with dry pastries as well as chocolate and custard-based desserts.
