Cantina Merano's Sauvignon comes from 100% Sauvignon Blanc grapes harvested in the territories of the municipalities of Marlengo, Cermes, Lana and Lagundo, in the province of Bolzano. The original vineyards are made up of 10-20 year old vines and are rooted in sandy and clayey soils, at an altitude between 450 and 600 meters above sea level. The vinification involved a 12-hour cold maceration which facilitated the extraction of the primary aromas of the fruits. The alcoholic fermentation, which converted the sugars into alcohol, took place at a controlled temperature in stainless steel tanks. The refinement lasted 5 months in contact with the yeasts. SAUVIGNON FESTIVAL CANTINA MERANO: TASTING The Sauvignon from Cantina Merano is straw yellow in color with greenish reflections. On the nose it expresses aromas of yellow pulp fruit which combine with hints of white spring flowers and vegetal notes of nettle and aromatic herbs. On the palate it is pleasantly fresh and mineral, with a strong fruity and floral taste. To be tried in combination with vegetarian dishes as well as tasty seafood recipes.
