Fazi Battaglia's Verdicchio dei Castelli di Jesi Classico comes from vineyards located in the heart of the Classica dei Castelli di Jesi area, located at altitudes closest to sea level, with southern exposure, on purely sandy soils rich in silt. After a careful selection of the best bunches, we proceed with a soft pressing of the whole grapes. The fermentation takes place in stainless steel tanks at a constant temperature between 14-16 °C (the temperature control serves to ensure that the fermentation takes place develops slowly and constantly and that there are no fermentation blocks, with the death of wine yeasts and the possible triggering of fermentations by other fungi or unsuitable bacteria; in the case of whites and rosés, it is particularly important also to preserve the aromas) . After fermentation, the wine ages on its noble lees until January.
VERDICCHIO FAZI BATTAGLIA: THE TASTING
Fazi Battaglia's Verdicchio Classico has a straw yellow color with greenish reflections. On the nose it is young with notes of apple and pear, flowery with references to broom, and balsamic, with touches of anise. The mouth is fresh and tasty, with light almond notes on the finish. Good with ricotta and spinach ravioli seasoned in the classic way with butter and sage.
