The Verdicchio dei Castelli di Jesi Classico by Fazi Battaglia comes from vineyards located in the heart of the Classic area of the Castelli di Jesi, situated at altitudes closest to sea level, with a southern exposure, on predominantly sandy soils rich in silt. After a careful selection of the best bunches, a gentle pressing of the whole grapes takes place. Fermentation occurs in stainless steel tanks at a constant temperature between 14-16 °C (temperature control is essential to ensure that fermentation develops slowly and steadily, preventing fermentation blocks, which can kill the wine yeasts and potentially trigger fermentations by other unsuitable fungi or bacteria; in the case of whites and rosés, this is particularly important to preserve the aromas). After fermentation, the wine matures on its noble lees until January.
VERDICCHIO FAZI BATTAGLIA: TASTING
Fazi Battaglia's Classico Verdicchio presents a straw yellow color with greenish reflections. On the nose, it is young with notes of apple and pear, floral with hints of broom, and balsamic, with touches of anise. The palate is fresh and savory, with light almond notes on the finish. Good with classic ricotta and spinach ravioli seasoned with butter and sage.
