The Sauvignon Praepositus from Abbazia di Novacella is made from 100% Sauvignon Blanc grapes grown in the area of Bressanone and Varna, in the province of Bolzano. The vineyards are located on a soil rich in gravelly silt-sand at an altitude ranging from 600 to 650 meters above sea level. After the harvest in September, the winemaking and aging process took place for several months in stainless steel containers. Before being marketed, the wine rested for 3 months in the bottle. The wines from the Praepositus line of the Abbazia di Novacella winery come from the best company vineyards. Indeed, like those from previous vintages, this 2019 Sauvignon remains one of the reference points in the category of South Tyrolean wine production.
SAUVIGNON PRAEPOSITUS ABBADIA DI NOVACELLA: TASTING
The Sauvignon Praepositus from Abbazia di Novacella shines in the glass with a vivid straw yellow color with shy greenish reflections. Notes of elderflower, mint, citrus, and yellow-fleshed fruit compose a slender and elegant nose. The fine aromaticity of the Sauvignon then explodes on the palate supported by a fresh trail that joins a clear and very pleasant minerality that lingers in the long finish. Excellent to enjoy as an aperitif, with seafood starters and mains, or paired with simple recipes based on vegetables or white meats.
