The Sylvaner of Abbazia di Novacella is a 100% Sylvaner-based white wine grown in the Conca di Bressanone area. The vineyards are trained using the Guyot system on soil rooted in moraine deposits, at an altitude between 650 and 750 meters above sea level. During winemaking, alcoholic fermentation took place 3/4 in stainless steel and 1/4 in 50 hectoliter acacia barrels. The refinement took place for a few months in the same fermentation containers.

The Sylvaner of Abbazia di Novacella is presented in the glass of a straw yellow color with greenish reflections. The nose displays aromas of tropical yellow pulp fruit, wild flowers and mountain herbs. The sip is soft and balanced, supported by a pleasant mineral freshness. At the table it goes well with cheeses and vegetarian dishes as well as delicious seafood recipes based on white fish, molluscs and crustaceans.
