The Sauvignon of Abbazia di Novacella is made from 100% Sauvignon Blanc grapes grown in the territory of Cornaiano, a fraction of Appiano on the Wine Road (BZ). The originating vineyards are situated on soils characterized by morainic sandy silt, at an average altitude of 420 meters above sea level. The alcoholic fermentation took place in stainless steel, using selected natural yeasts, at a controlled temperature of about 20°C. Before being marketed, the Sauvignon Alto Adige DOC 2017 from Abbazia di Novacella rested for 6 months in steel.
SAUVIGNON ABBAZIA DI NOVACELLA: THE TASTING
The Sauvignon of Abbazia di Novacella presents itself in the glass with a straw yellow color with greenish reflections. On the nose, aromas of yellow-fleshed fruit emerge combined with vegetal hints of nettle and pepper leaf. Full-bodied, on the palate it is fresh and mineral with a pleasant aromatic persistence. Excellent as an aperitif, at the table it pairs well with fresh and semi-aged cheeses, as well as with tasty seafood and vegetarian recipes. Also try it paired with simple dishes based on white meats.
