The Riesling from Abbazia di Novacella is produced from 100% Riesling Renano grapes grown using the Guyot method on soils characterized by permeable morainic deposits. The reference vineyards are located in the Bressanone Valley, at an altitude between 700 and 900 meters above sea level. During the white winemaking process, alcoholic fermentation took place in stainless steel at a temperature of 17-19°C. The aging lasted for 6 months in stainless steel.

The Riesling from Abbazia di Novacella presents a light straw yellow color with greenish reflections. On the nose, it expresses aromas of white peach combined with floral notes of jasmine and wisteria, along with citrus hints of cedar and lime. The palate is agile and pleasant, with great freshness and distinctly mineral. It pairs well with cheeses and vegetarian dishes, as well as delicious seafood dishes.
