Angelo Parodi selects the finest tuna varieties that grow in temperate waters. Skillful rules of cutting, cleaning and portioning of fish guarantee a high quality sliced tuna. But the real secret of Angelo Parodi that guarantees a soft slice is the slowness with which it is placed in the package, without compression so as not to alter its compactness. The tuna in oil only reaches the perfect flavor after a few months of aging. Thirty days after canning begins the real ripening of fish taste, because the oil, penetrating into the fibers, blends with the fats of the meat and over time creates the intense and unmistakable flavor.
