The Ribolla Gialla by Bastianich is made from 100% Ribolla Gialla grapes. The vineyards, facing South and Southwest, are rooted in soils characterized by Eocene marl with a limestone and clay base, also known as ponca, at an altitude of about 120-180 meters above sea level. The harvest took place in the first decade of September, with a yield of 80-90 quintals per hectare. In the winery, the grapes were hand-selected and subjected to soft pressing. The alcoholic fermentation of the must took place in stainless steel tanks at a controlled temperature of 16-18°C, for a period of 15-20 days. The aging occurred for 3-4 months in stainless steel in contact with the fine lees.
