Benanti's Etna Rosato comes from a selection of grapes from vineyards located on the south-eastern side of Etna. The vine is pure Nerello Mascalese from plants of varying ages, trained in espalier with double spurred cordon pruning. The soils are sandy, volcanic, rich in minerals and the climate is purely mountain and high hill, humid and rainy in the coldest season, with high ventilation and notable temperature variations. The grapes are harvested by hand in the first ten days of October, destemmed and subjected to cold pre-fermentation maceration for 12 hours, pressed with soft squeezing obtaining 65% free-run must. The fermentation continues without skins for about 10 days at a controlled temperature in steel tanks, using specific native yeasts selected after long experimentation. The wine is left to mature in the tank on the fine lees, before being bottled and refined for another 2-3 months.

Benanti's Etna Rosato has a beautiful intense antique pink color. It is interesting on the nose, with beautiful floral notes of wisteria and broom and fruity notes of blackberry and cherry syrup; there is no shortage of refreshing notes of fennel seeds and mineral touches. In the mouth it is fresh, savory, slightly tannic and long on red fruit. Very versatile, it goes well with both tuna tartare and lightly seasoned cured meats.
