Bibi Graetz's Soffocone was made from Sangiovese grapes with a small addition of Canaiolo and Colorino. The reference vineyards - approximately 40 years old - are rooted in soils characterized by clay and marl. In the cellar during the red vinification the alcoholic fermentation was activated spontaneously thanks to the indigenous yeasts and took place in stainless steel for about 10 days. The refinement took place for 15 months in French oak barriques.

Bibi Graetz's Soffocone di Vincigliata stands out in the glass with an intense ruby red color. On the nose it offers aromas of morello cherries and ripe berries that meet floral hints of iris and violet and notes of balsamic herbs, noble woods and dark spices. At the table it goes well with cured meats and cheeses as well as rich land dishes based on red meat or game.
