The Cannubi vineyard was born about 12 million years ago due to sedimentation from the Po Sea, the most famous and renowned cru of Barolo, already mentioned in historical documents dating back to 1700. It has an excellent terroir complexity, formed by large limestone clay marl soils and a favorable climate that make this hill one of the most dedicated to vine cultivation in the world. The wines from Cannubi are by far those with the most elegance and longevity throughout Barolo's wine landscape.
Package: 1 bottle of 0.75 lt
Grapes: 100% Nebbiolo
Production area: Barolo — Mga Cannubi.
Exhibition and altitude: South; from 290 to 320 mt above sea level; 1.30 hectares.
Soil type: Layey calcareous marl, slightly sandy.
Breeding system: Modified Guyot (headband).
Vinification: Natural fermentation without yeasts added in concrete tanks of about 12 days with temperatures starting from 22 C to 29 C with subsequent maceration in submerged hat for approx. 40 — 50 days at a temperature of 29 C. As a result, the malolactic fermentation lasts 15 days with a constant temperature of 22 C. After that the wine goes into 4500 L barrels in oak Slavonia and French oak, to refine for 4 years, to finish with 6 months of aging in bottle.
Vintage: 2015 began with a winter characterized by abundant snowfall that allowed an excellent water supply of the land. This factor, combined with a spring with mild temperatures since the month of February, allowed an advance of the vegetative cycle that was then maintained in the continuation of the vintage. The season continued with a succession of rainfall between the end of May and the first decade of June. Since the second half of June, and throughout July, rains have been absent and temperatures have settled on above average highs. However, the heat did not cause any stress to the vineyards, thanks to the abundant water supplies built up in the first months of the year. The climatic conditions, recorded in early summer, have laid the foundation for an advance in the ripening of grapes by about ten days compared to the previous year, but in line with a vintage that we can define “classical”. From a quantitative point of view, on average, production in the standard was seen: this allowed to intervene with targeted and targeted thinning. We can archive the vintage as one of the best in recent years: Nebbiolo has come to maturation perfectly, albeit slightly ahead of the average of recent years. Excellent quality of tannins that will certainly guarantee elegant and long-lived structured wines. A harmonious wine. We can claim, without any doubt, that this is a great vintage, to remember, like few others in history. After the harvest in the Cannubi vineyard of the same name, with the complexity of excellent terroir and formed by large limestone clay marl soils, the grapes undergo spontaneous fermentation in concrete tanks, to temperatures between 22°C and 28°C, of about twenty days, followed by a long maceration in submerged hat (more than 40 days) during which malolactic fermentation takes place. As temperatures rise in spring, the wine is decanted into large Slavonian oak barrels where it will age for 4 years. This is followed by six months of ageing in concrete before being bottled.

Since 1761 the most historic winery in Barolo. Even today, underground cellars represent a rare historical memory of Langa, and wines are produced according to tradition: long spontaneous fermentations without the use of selected yeasts in cement tanks, and long refinements strictly in large Slavonian oak barrels. We cultivate our vineyards in Barolo, Madonna di Como, and in the Tortona Hills. With full respect for the earth: we do not use chemical fertilizers, we do not use herbicides, we only practice sustainable treatments, this will lead us to be certified Organic with the 2019 harvest. Today Borgogno continues to be an expression of a territory, and of tradition and history, but always with a careful eye to the future.
