Cantina d'Isera's Schiava is the result of a brief maceration on the skins and a subsequent completion of white fermentation at a controlled temperature. The vineyards of this variety, once the most widespread in the region, are located on the hills, in the municipalities of Isera and Nogaredo, and are grown with the traditional Trentino double pergola. We are between 200 and 300 meters above sea level with east exposure, on mixed soils made up of gravel, limestone, basalt and sand, with good draining capabilities. The grapes are harvested by hand in the second half of September and, as mentioned above, undergo light maceration and static decantation, then ferment at low temperatures. The subsequent refinement is carried out in steel: the entire process is aimed at preserving the original aromatic composition as intact as possible.

Cantina d'Isera's Schiava has a bright and intense pink, between cherry and ruby tones. The nose is frank, fresh and elegant: raspberry, rose petals, slight hints of pine resin, a subtle rocky minerality. In the mouth it is savory and thirst-quenching, with fruity acidity and a thin structure. It is happily drunk fresh, accompanied by various dishes, from pizza to lightly smoked cured meats, from smoked trout carpaccio with pink pepper, to rigatoni alla gricia.
