The Viognier from Casale del Giglio is made from 100% Viognier grapes, a variety native to the Rhône Valley that today manages to express itself at its best in different terroirs, including the Lazio region. The Casale del Giglio winery has focused greatly on enhancing certain French grape varieties that are widespread around the world (and for this reason defined as “international”) in relation to the soil and the typical microclimate of the province of Latina where the company’s vineyards are located. For this Viognier Lazio IGT 2017, the grapes were harvested in two phases, the first at optimal ripeness, and the second with slight overripening of the clusters. The winemaking process began with a cryomaceration (cold maceration that allows the extraction of substances and primary aromas from the grapes) conducted at a temperature of 7°C-8°C for 8-10 hours. The alcoholic fermentation started spontaneously at a temperature of 17°C/18°C and lasted about 10 days. Before being bottled, the wine rested for a few months in stainless steel tanks on its own yeasts.

The Viognier Lazio IGT from Casale del Giglio presents a brilliant straw-yellow color. Aromas of acacia, broom, and wildflowers emerge on the nose, combined with clear notes of peach, apricot, and yellow-fleshed fruit. Agile and fruity, on the palate it expresses a pleasant mineral freshness that invites a second sip. At the table, it pairs well with fresh and semi-aged cheeses as well as with vegetarian dishes and tasty seafood recipes.
