The Malvasia di Castelnuovo Don Bosco Gilli by Cascina Gilli is one of the symbolic wines of this company which has always been committed to the recovery and valorisation of the local ampelographic platform. It is composed of 80% Malvasia di Schierano and 20% Malvasia nera lungo, two aromatic red grape varieties present almost exclusively in Piedmont. The vineyards are located at approximately 380 meters above sea level, on characteristic blue-grey clayey marl soils. The grapes, harvested by hand, are destemmed and pressed softly so as not to break the seeds which would give a herbaceous taste. The skins and must remain together for a short fermentation, aimed more at extracting color than developing alcohol levels. The must thus obtained is filtered and stored at low temperature, to keep its freshness and aromas intact. In order to carry out bottling it is necessary to complete the alcoholic fermentation in an autoclave, with the use of selected yeasts, until the typical liveliness and 5.5 volume levels are reached.

The Malvasia di Castelnuovo Don Bosco Gilli by Cascina Gilli has a cherry red color with purple reflections. It is inviting on the nose, with vinous and fruity notes of small berries, enriched with floral hints of iris and wisteria. In the mouth it is sweet, fresh and tickling, very pleasant with any dessert and even with fruit, perfect with a sablè pastry with custard and fresh raspberries.
