The Chianti Classico DOCG from Castello di Ama is obtained from 96% Sangiovese and 4% Merlot grapes. The original vineyards, with northwest and southeast exposure, lie on clay-limestone soils at an altitude ranging from 460 to 525 meters above sea level. After the harvest, the grape varieties were vinified separately: alcoholic fermentation, which converted sugars into alcohol, took place in stainless steel tanks, using indigenous yeasts, for a period of 26 days, at a controlled temperature of 30/32°C. The blending occurred after malolactic fermentation, which softened the structural and aromatic edges of the wine. Before bottling, the Chianti Classico DOCG from Castello di Ama aged for several months in fine-grained oak barriques.
CHIANTI CLASSICO CASTELLO DI AMA: TASTING
The Chianti Classico DOCG from Castello di Ama appears with an intense ruby red color. On the nose, aromas of cherry and ripe red berries intertwine with delicate hints of black pepper and dark oriental spices. The palate is fresh and pleasant, supported by soft tannins and a gentle minerality that persists in the fruity and spicy finish. Excellent as an all-around meal wine, it pairs well with cured meats and semi-aged and aged cheeses, as well as vegetarian dishes and tasty meat-based recipes featuring red meats or game.
