Cerbaia's Rosso di Montalcino is produced from pure Sangiovese grapes. The reference vineyards, exposed to the North, are trained with spurred cordon and have an average age of 10 years: the soils on which they rest are of the galestrous type, composed mostly of schist clay. The estimated altitude is approximately 350 meters above sea level. After the harvest, carried out in the last week of September, the bunches were transferred to the cellar for red vinification. The alcoholic fermentation took place in 50 hectoliter stainless steel vats and was accompanied by a maceration of the must on the skins for 15 days at a controlled temperature. The refinement lasted 4 months in large Slavonian oak barrels plus 4 months in the bottle.
ROSSO DI MONTALCINO CERBAIA: TASTING
Cerbaia's Rosso di Montalcino presents itself to the eye with an intense ruby red colour. On the nose it expresses aromas of small ripe red fruits and dried violets which combine with balsamic hints and notes of dark spices. The sip is fresh and mineral, supported by smooth tannins and a taste played on fruity and slightly spicy notes. At the table it is perfect with cured meats and cheeses as well as in combination with tasty land recipes. Try it with tagliatelle with Cinta Senese ragù.
