Château Simon is a fine French sweet wine, characterized by a brilliant golden yellow color and widely recognized worldwide for its intensity, persistence, and body. Hailing from the renowned Bordeaux region, it is classified as AOC Barsac. This wine is the result of the Dufour family's work, which has been producing wines for three generations while respecting local traditions, enriched by modern sustainable agricultural techniques that preserve the quality of the vine and the final product. Made with a skillful blend of white grape varieties, Château Simon combines 8% Sauvignon, 90% Sémillon, and 2% Muscadelle. These varieties come from the Barsac-Sauternes vineyards, located on clay and limestone soils, ideal for a mild climate. The vines, robust and resistant to diseases and adversities, yield clusters with a unique flavor. Harvesting is a rigorous process, carried out manually grape by grape in multiple passes starting from the end of September. Only overripe grapes, affected by the "noble rot" Botrytis Cinerea, are selected to promote withering and the development of a high glycerol, sugar, and alcohol content, which gives the wine its distinctive roundness and richness. After fermentation, the must is carefully selected and blended, eliminating up to 70% of the initial product.
