The Syrah Principe di Granatey is a selection from the Colomba Bianca wineries. First produced in 2012, this Syrah is made from vines located at an altitude of 300 meters, harvested in mid-September. The grapes are hand-picked and carefully destemmed before maceration. After malolactic fermentation (a fermentation process driven by lactic acid bacteria that transforms malic acid into lactic acid, modifying the wine's acidic structure and making it smoother), the wine matures in steel silos for 8 months.
SYRAH PRINCIPE DI GRANATEY COLOMBA BIANCA: TASTING NOTES
The Syrah Principe di Granatey 2020 from Colomba Bianca displays a ruby red color with violet reflections, typical of the grape variety. On the nose, it is varietal with notes of blackberry, violet, and pepper; on the palate, it has structure, aromatic roundness, and a long finish. It pairs well with spicy pork dishes prepared in the Indian style, or with medium-aged, highly aromatic cured meats and cheeses, such as the lardo di Nero dei Nebrodi (a traditional pig breed from the Madonie), or Piacentinu ennese (a sheep cheese with whole black pepper and saffron).
