The Sauvignon Lafóa by Colterenzio: a name and a label present in the imagination of every wine lover since youth. It is one of the wines that has been produced with very high quality standards since the 1980s from the namesake great vineyard. It is a rather dry area with sandy and gravelly soils of morainic origin; the exposure is optimal. After a brief maceration, the perfectly ripe grapes are pressed. The must ferments halfway in steel, and the rest in barrique. Only the latter part undergoes malolactic fermentation (a fermentation involving lactic acid bacteria that transforms malic acid into lactic acid, modifying the wine's acidic structure and making it softer). After about 8 months of aging on the lees, the two wines are blended and bottled.
SAUVIGNON LAFOA COLTERENZIO: TASTING
The Sauvignon Lafóa by Colterenzio presents itself in the glass with an intense straw yellow; on the nose, it is rich with flowers and herbs: from the local elderflower, to acacia, to sage. On the palate, it is very fresh, broad, and long. To be tasted now and uncorked again in 5-6 years. Good with green anchovies Ligurian style, or with Cacciucco Livornese, or even with rabbit stew with olives.
