Soave Cimalta by Corte Adami is a white wine produced from 100% Garganega grapes. The reference vineyard is located in the territory of Castelcerino, a hamlet of Soave (VR). The soils here are on average calcareous with a volcanic substrate and are located in the highest part of the Calssica area of the Soave DOC at an altitude of 338 meters above sea level. In the cellar, after destemming, the bunches were subjected to soft pressing to obtain the must. The alcoholic fermentation was preceded by a cold maceration (14°C) for one night to facilitate the extraction of the primary aromas. The refinement lasted 2 months in stainless steel in contact with the fine lees.

Soave Cimata by Corte Adami appears straw yellow in color with greenish reflections. On the nose it offers aromas of yellow pulp fruit and white wild flowers that meet hints of flint and citrus fruits. Of excellent taste-olfactory coherence on the sip, it expresses a vibrant mineral freshness that persists in the finish. Ideal in combination with cheeses and delicious dishes based on vegetables and fish, especially lake fish.
