The Pithos Rosso by COS takes its name from the Greek word Pithos, a terracotta jar with a characteristic shape. The grapes used are 40% Frappato from Vittoria and 60% Nero d'Avola, grown organically at about 250 meters above sea level, on red soils with sub-Apennine sands of Pliocene origin. The vineyards are located in the heart of the Cerasuolo di Vittoria denomination, between Acate and Vittoria, distributed in the areas of Bastonaca and Fontane, with vines averaging 20 years of age. The harvest takes place between the end of September and the beginning of October. Fermentation occurs spontaneously in terracotta amphorae, with the skins, using indigenous yeasts; aging is done in terracotta first and then in bottle.

The Pithos Rosso by Cos appears in the glass with an intense and bright ruby color. On the nose, it is very expressive and penetrating: red fruit, fresh and withered flowers, Mediterranean scrub, a slight brininess, hints of tomato paste, smoky notes. On the palate, it is well balanced, juicy and fresh, savory and long. It should be tasted alone, then paired with a lightly spiced and peppery beef tartare, or with grilled pork scamerita.
