The Angimbé by Cusumano is made from Chardonnay (70%) and Insolia (30%) grapes cultivated in the Ficuzza estate in the territory of Piana degli Albanesi (PA). The original vineyards, facing east and southeast, are located on clayey-loamy soils at an average altitude of 700 meters above sea level. The winemaking process began with a cold maceration phase at a temperature of 8°C lasting 12 hours, which facilitated the extraction of the primary aromas of the grape. The alcoholic fermentation, which converted sugars into alcohol, took place at a controlled temperature of 18-20°C. Before commercialization, the Angimbé Terre Siciliane Bianco IGT by Cusumano matured in stainless steel for 4 months on fine lees (the residues of fermentation) and for a short period in the bottle.
ANGIMBÉ CUSUMANO: TASTING
The Angimbé releases aromas of tropical yellow-fleshed fruits that blend with hints of broom and yellow wildflowers and delicate citrus notes. The taste is smooth and pleasant, enhanced by a nice freshness and a pronounced minerality that lingers in the finish. Excellent as an aperitif, it pairs well with fresh and semi-aged cheeses as well as with vegetarian dishes and tasty seafood recipes based on white fish, mollusks, and shellfish.
