Etna Rosso Alta Mora by Cusumano is pure Nerello Mascalese, an indigenous Etna variety cultivated on trellises and bush-trained in 12 hectares of vineyards, at an altitude of 600/800 meters above sea level in the municipality of Castiglione di Sicilia, in the contrade of Verzella, Pietramarina, Feudo di Mezzo, and Solicchiata. The harvest takes place in the second decade of October; the maceration lasts for about 12 days, after which malolactic fermentation occurs in steel (a fermentation driven by lactic acid bacteria that transforms malic acid into lactic acid, altering the wine's acidic structure and making it smoother). The wine then matures in 25 hl barrels.

Etna Rosso Alta Mora presents itself in the glass with a vivid ruby red; on the nose, it is all about the underbrush, from small dark fruits to mineral and humus notes. On the palate, it is tight, dry, fairly fresh, with a long and savory finish. Excellent with the fragrant Catanese cartocciata, or with stewed rabbit with olives.
