The manual harvest in crates, carried out in early September, helps to preserve the integrity and aromatic heritage of the bunches, which are immediately transferred to the nearby winery. The processing follows a respectful and precise method: gentle pressing, fermentation starting in autoclave, and subsequent microfiltration that prepares the wine for autumn bottling. The aging in steel preserves the fragrance and expressive immediacy, enhancing a light, joyful profile designed for a young and spontaneous drink.
