This Cuvée Réserve expresses all the power of the Cote de Lechet. The bouquet combines floral elegance with the mineral intensity of the terroir. The taste is characterized by roundness, volume and richness.

Vinification: A complete analysis of each match at the reception of the grapes in the cellar. Soft and slow pressing to extract the flower must. Slow alcoholic fermentation at 20°C on fine yeasts. Daily temperature checks during fermentation.
Maturation and Aging: Coming from the oldest vineyards of the farm, planted in 1955 by Bernard Defaix and exposed to the sun in an exceptional way. This Cuvée is partially fermented and aged in oak barrels. In fact, about half of the wine is fermented in barriques and remains there for 12 months on fine yeasts (with regular “batonnage”). Then it is cut with the other part aged in stainless steel containers. The result is bottled 18 months after the harvest with a slight filtration and without tartaric stabilization.
Serving temperature: 12°C
Pairings: Excellent when served with salmon or other fish delicacies.

Bernard Defaix, with his two sons Sylvain and Didier, runs his own company following the traditions of family handed down from four generations of winemakers. The Domaine covers 25 hectares, including 11 Premier Crus (Côte de Lechet, Les Vaillons and Les Lys), 12 ha of Chablis and 2 ha of Petit Chablis. Defaix is considered one of the best producers on the left bank of the Serein River, an area that reserves wonderful surprises above all in the hottest vintages. Only a few Defaix wines ferment and are aged in wood (Chablis Vieille Vigne and Chablis premier cru Cô ; te de Lechet Reserve). In other cases, the barriques are used with great caution, in order to preserve the typical nature of the various appellations. In the winemaking phase, a fundamental role is played by aging on the lees (with a stay of 8 to 12 months) with batonnage or pumping over without contact with air, which makes it possible to obtain rounder and more structured wines, while protecting them from oxidative trends.
