Monfarina is a term that is inspired by a traditional dance, it is a white wine with a pale yellow color, to the smell it seduces for the intensity of the aromas (exotic scents that recall the fruit of passion and the lychee, along with a minerality reminiscent of citrus and cassis). Round and persistent taste.
Package: 1 bottle of 0.75 lt
Grape varieties: Jacquère, Mondeuse Blanche and Verdesse.
Vinification: manual harvests with sorting of the grapes that are then gently pressed. The must is cleaned by lowering its temperature to 10° for 96 hours. There is a slow alcoholic fermentation at a controlled temperature (max 16°) that lasts depending on the vintages from 3 to 12 weeks, followed by malolactic fermentation. Vinified according to the 'Nature & Progrès directives.
Aging: on the lees for 10-14 months.
Pairings: it is indicated with cheeses but it goes well with fish and seafood. In Savoy it is common to drink it as an aperitif.
Aging: 5 to 10 years.

Savoy, with its average altitude of 1,500 meters, is identified as high mountain department, where the land suitable for cultivation is rare and rugged. The climate is harsh but the combination of the presence of large valleys, accidental landslides and a Awful exposure create a privileged and almost unique environment for the vine. Domaine Giachino is located in the historic region of Savoy, within the “Parc naturel Régional de Chartreuse”. Domaine Giachino's wines are produced with methods organic, with deep respect for nature, according to the rules of conduct laid down by the “AB” (Certifié Agricolture Biologique) and “Nature et Progrès” brands. Herbicides, synthetic chemicals, and pesticides are banned. Thanks to this return to the origins of agriculture, the essential result of constantly improving the authenticity of wines is pursued.
