Elena Walch's Pinot Grigio is mainly produced from the Klughammer vineyard in Caldaro (230 m above sea level, on soil composed of limestone pebbles from the Adige and moraine deposits). The grapes are softly pressed and the must undergoes static clarification. The fermentation takes place in steel tanks at a controlled temperature of 20°C (the temperature control serves to ensure that the fermentation develops slowly and constantly and that there are no fermentation blocks, with the death of the wine yeasts and the possible trigger fermentation by other fungi or unsuitable bacteria; in the case of whites and rosés, it is also particularly important to preserve the aromas). The wine then ages for a few months on its own yeasts in stainless steel containers.
PINOT GRIGIO ELENA WALCH: THE TASTING
Elena Walch's Pinot Grigio enters the glass with a bright straw yellow; on the nose it is typical and pleasant with hints of pear, white flowers, slightly smoked pepper and sage. The mouth has structure, minerality and defined persistence. Very good with paccheri, calamari, sage, lemon zest and bottarga.
