Lo chardonnay "Cardellino" si presenta alla vista con un giallo paglierino intenso. Profumi di frutta esotica, aromi maturi, note di fiori di tiglio e di miele contraddistinguono la complessità olfattiva. Questo classico di Elena Walch convince il palato con la sua pienezza e persistenza, con la sua freshzza e vivace mineralitá che si protrae leggera, elegante ed armoniosa per chiudere in un lungo finale intenso e morbido.
Packaging: 6 bottles of 0.75 lt Grape variety: 100% Chardonnay Production area: Hillside vineyard, overlooking Lake Caldaro, in the Castel Ringberg farm, municipality of Caldaro, at 400 m a.s.l. Medium-textured soil with clayey and calcareous parts given by residues from the interglacial period. Vinification: Soft pressing of the grapes, with subsequent static decantation of the must. Fermentation at a controlled temperature of approx. 20° C. At the end of fermentation the must remains in contact with the yeasts for a long time. Part of the must (approx. 15%) is fermented and aged in French oak barrels for 5 months. After the racking at the end of fermentation, the wine remains on the lees for a long time. In the spring, the assembly takes place. Alcohol content: 13% Vol. Aging: 3-5 years
