Elena Walch's Sauvignon is produced with bunches harvested mainly from the Altenburg vineyard in Caldaro. We are at 600 meters above sea level, on porphyry quartz terraces with limestone and dolomite stone. The grapes are softly pressed and the must undergoes static clarification. The fermentation takes place in steel tanks at a controlled temperature of 19°C (the temperature control serves to ensure that the fermentation develops slowly and constantly and that there are no fermentation blocks, with the death of the wine yeasts and the possible trigger fermentation by other fungi or unsuitable bacteria; in the case of whites and rosés, it is also particularly important to preserve the aromas). The wine then ages for a few months on its own yeasts in stainless steel containers.
SAUVIGNON ELENA WALCH: TASTING
Elena Walch's Sauvignon appears in the glass with a beautiful straw yellow with youthful greenish reflections. The nose is territorial, with hints of gooseberries, elderberries and mountain herbs. On the sip it is elegant, with sustained acidity and tasty. Very good in the company of spicy noodles with prawns and vegetables.
