The Beyond The Clouds by Elena Walch is a blend of indigenous white grape varieties, predominantly Chardonnay, grown in the Terlano area, in the province of Bolzano. During the white winemaking process, alcoholic fermentation took place in wood with weekly batonnage that lasted for a period of 3 months. The aging of this multiple award-winning Supercuvée was 10 months in French barriques plus an additional 6 months in the bottle.

The Beyond The Cloud White Alto Adige by Elena Walch presents itself with a straw yellow color with golden reflections. On the nose, it releases aromas of tropical yellow fruit and white flowers that meet notes of toasted hazelnut, vanilla, and sweet spices. The sip is intense and mineral, with a layered taste played on fruity and floral notes and a long finish. At the table, it pairs well with cheeses and vegetarian dishes as well as flavorful white seafood recipes based on white fish, shellfish, and crustaceans.
