The Taurasi di Fiorentino is produced in slightly more than 3000 bottles per year. The grapes come from the Contrada Casale of Paternopoli, a vineyard planted in 2008 that extends over an area of 1.4 hectares, on medium-textured soil tending towards clay, with low yields that lead to a complex wine with high alcoholic and polyphenolic potential, suitable for long aging periods. The grapes are traditionally vinified in temperature-controlled steel tanks, and the wine is then aged in large barrels and bottles.
TAURASI FIORENTINO: THE TASTING
The Taurasi di Fiorentino presents itself in the glass with a shining ruby color with dark red reflections. On the nose, it gradually opens up: at first, it shows evolved aromas of leather, tobacco, coffee, and black tea, then blackberries and blueberries in jam and underbrush with balsamic tones make their way through. The sip is a flavorful blend of tannin, freshness, fruit, and spices. It pairs very well with braised beef as well as with herb-crusted venison fillet.
