This wine comes from old Sauvignon vines that grow on silica slopes. Historically, the names of these plots, previously worked by the monks of Saint-Satur, were called 'Les Bourgeoises'. This is why in the eighties this name was given to the cuvée born from these plots.
Wine in which the aromas of flint and spices are combined with fruity notes. Wine with an exemplary balance, of an unequal finesse and concentration, will express its elegance along its evolution in the bottle for 10-12 years.

varieties: Sauvignon Blanc
Vinification: upon arrival in the cellar the grapes are crushed and after settling at low temperatures, part of the wine is made ferment in thermoregulated stainless steel tanks, while the other part in casks of origin Troncais. It is followed by aging on fine fermentation yeasts with bâtonnage for 7/8 months, before bottling.
Pairings: It goes well with fish, white meats and slightly spicy preparations.
