La Guardiense's Aglianico Janare is one of the labels of the largest producers' cooperative in the Centre-South. Founded in 1960 by 33 far-sighted and courageous members, today La Guardiense has around a thousand of them: all farmers who directly cultivate more than 1,500 hectares of hillside vineyards (around 350 meters above sea level), with an average annual production of 200,000 quintals of grapes. Great attention to environmental sustainability has always been imperative, and this is practiced with integrated pest control in the vineyard and with the use of renewable energy coming from its own impressive photovoltaic system. (Speaking of plants, the cooperative owns one of the largest sparkling wine production plants in the South.) The winemaking management is entrusted to the tandem Marco Giulioli, internal oenologist, and Riccardo Cotarella, external consultant. This Aglianico is part of the Janare line: "in Sannio the janare are the witches, mythical figures of civilization and peasant culture who allude to the strong and indomitable character of the women of this land". The vines have their roots in calcareous clay soils, at an altitude between 250 and 300 metres. The grapes are harvested in the second half of October, fermented and macerated on the skins in steel for 18 days, with a few daily pumping overs and 20% bloodletting; the wine then ages for 6 months in 500 hectoliter Allier oak vats.

The Aglianico de La Guardiense has a deep ruby color, with violet hues. On the nose it smells of cherries in alcohol, dried rose petals and plum jam, with hints of humus and sweet spices; it is enveloping on the palate, with present but soft tannins, good structure and lots of fruit. An interesting pairing with Pulled Boar, wild boar in the style of Pulled Pork, as Damiano Donati makes it (Ristoro della Fattoria Sardi, Lucca).
