The Fiano Janare by La Guardiense is one of the labels of the largest producer cooperative in Central-Southern Italy. Founded in 1960 by 33 visionary and courageous members, today La Guardiense has around a thousand: all farmers who directly cultivate more than 1,500 hectares of hillside vineyards (around 350 meters above sea level), with an average annual production of 200,000 quintals of grapes. Great attention to environmental sustainability has always been a priority, practiced through integrated pest management in the vineyard and the use of renewable energy from its impressive photovoltaic system. (Speaking of plants, the cooperative owns one of the largest sparkling wine production facilities in Southern Italy.) The winemaking is overseen by the duo Marco Giulioli, the in-house winemaker, and Riccardo Cotarella, an external consultant. This Fiano is part of the Janare line: "in Sannio, Janare are witches, mythical figures of peasant civilization and culture that allude to the strong and indomitable character of the women of this land." The vines take root in clayey limestone soils, at an altitude between 300 and 400 meters. The grapes are harvested in the first half of September, cryomacerated in reduction, gently pressed, and vinified in stainless steel at controlled temperatures; the brief aging also takes place in steel, and the wine is bottled in March following the harvest.

The Fiano from La Guardiense is pale yellow with greenish reflections. On the nose, it is intriguing, with hints of aromatic herbs, apple, acacia flowers, and briny notes; on the palate, it is subtle, refreshing, with good acidity and salinity. A perfect summer aperitif, especially when paired with skewers of fresh tomatoes, buffalo mozzarella, and basil.
