Lo Zoccolaio's Barolo comes from the selection of grapes from vineyards that are still quite young (10-12 years old) in Barolo, Monforte d'Alba and Verduno, with an average altitude between 280 and 300 meters above sea level, south-west exposure and marly soil -limestone. After the October harvest, done rigorously by hand as per tradition, we proceed with destemming, soft pressing, and fermentation in stainless steel tanks at a controlled temperature. After malolactic fermentation, the wine ages in French barriques for 36 months and further ages in the bottle for 6 months before being sold.
BAROLO LO ZOCCOLAIO: TASTING
The Barolo of Lo Zoccolaio has the traditional garnet red color. The nose is initially severe and ethereal, then opens into notes of wild strawberry, violet, fresh hay, balsamic and spicy hints. On the palate it is warm, juicy and persistent. To be opened a little in advance and accompanied with mature cheeses, for example from Comté, or local cuisine dishes, such as cotechino with lentils, and even venison steak.

Zoccolaio produces exclusively red wines with grapes from its own vineyards located in Barolo, Monforte d 'Alba, Novello and Verduno. Every stage of wine creation is followed with great passion and dedication. The grapes are lovingly cared for and respect for the rhythms of nature is the guideline of the approach used. The harvest is done by hand, without haste, selecting the best bunches to be expressed in the bottle. From the soft pressing of the grapes, to fermentation, to aging, up to the bottle, nothing is neglected, everything happens with respect of tradition but with the most modern methods and tools.
