The Chianti Governo all'Uso Toscano by Melini is produced from predominantly Sangiovese grapes with the addition of complementary grape varieties. The vineyards of origin, trained to a spurred cordon, are developed on soils characterized by the presence of alberese and galestro in the territory of Radda in Chianti (SI). After the harvest, a portion of the bunches was dried in a fruit-drying room for about 3 weeks, while the remaining part was vinified in red. After the racking, thanks to the addition of the dried grapes, a second fermentation was activated, respecting an ancient traditional technique. The aging took place for several months in stainless steel.
CHIANTI GOVERNO ALL'USO TOSCANO MELINI: THE TASTING
The Chianti Governo all'Uso Toscano by Melini presents itself with an intense ruby red color. On the nose, it releases aromas of berries and floral notes of violet and iris. The palate is harmonious and full-bodied, supported by an integrated tannic structure and excellent sapidity. At the table, it pairs well with aged cheeses as well as flavorful meat dishes, especially those based on red meats.
