The Chianti Governo all'Uso Toscano by Melini is produced from predominantly Sangiovese grapes with the addition of complementary varieties. The vineyards, trained in a spurred cordon system, are located on lands characterized by alberese and galestro in the Radda in Chianti (SI) area. After harvest, a portion of the grapes was dried in a fruit drying room for about 3 weeks, while the remaining grapes were vinified in red. After the racking, a second fermentation was initiated by adding the dried grapes, following an ancient traditional technique. The aging process lasted for several months in stainless steel.

The Chianti Governo all'Uso Toscano by Melini presents an intense ruby red color. On the nose, it releases aromas of wild berries and floral notes of violet and orris. The taste is harmonious and full-bodied, supported by an integrated tannic structure and excellent savoriness. At the table, it pairs well with aged cheeses as well as tasty meat dishes, especially those based on red meats.
