The Pinot Noir Germogli Bianchi di Monsupello is a slightly moved white wine from the vinification of Pinot Noir without contact with the skins (88%) and Chardonnay (12%). The grapes are those of the vineyards in the first hilly area in the municipalities of Oliva Gessi and Torricella Verzate, whose soils are clay-limestone. The fairly young plants, around 15 years old, are cared for with obsessive attention to the vegetative-productive balance through careful winter pruning, the elimination of superfluous shoots, the thinning of the bunches and the grassing of the land. The grapes are pressed and destemmed, with the immediate separation of the skins from the juice; the must, clarified and decanted after about a day, is fermented in steel tanks at a controlled temperature of 18°C. After further decanting and stabilization, the wine is added with sweet must and selected yeasts and fermented in an autoclave, before being microfiltered and bottled. The final sugar residue is 9.5 g/litre.

Monsupello's white Pinot Noir sprouts are straw yellow with brilliant greenish reflections. The nose is focused on the fruit, currants and green apples in particular, and on the white flower; the palate cheered up by the delicate effervescence, it is soft, fresh, with good flavor and consistent with the olfactory profile. Original wine, it is a perfect opening, combined for example with the legendary Russian salad.
