The Amarone delle Valpolicella by Negrar Domini Veneti is a blend of 60% Corvina, Corvinone and Rondinella, each at 15%, and other grapes permitted to be regulated at the remaining 10%. The vineyard is located in the heart of Valpolicella Classica, on dry terraces, between 150 and 450 meters above sea level with south-east and south-west exposure; the soil is silty clay, sometimes calcareous and located on Eocene marl. The plants are between 15 and 25 years old and are grown with the traditional Venetian pergola. The harvest takes place between September and October with exclusively manual selection of the bunches before drying, which lasts until December/January in the fruit cellar. The winemaking takes place in February with fermentation temperatures between 12°/23° and slow maceration for 30 days. Once the malolactic fermentation takes place, the wine is aged first in wood, then in the bottle.

The Amarone delle Valpolicella by Negrar Domini Veneti is dark and dense garnet. The bouquet is expressed with notes of vanilla, cherry in alcohol, dried fruit, walnut husk and mentholated tobacco. On the palate it has great softness, round tannins and a balsamic finish. It is a wine to pair with mature cheeses, for example 60-month Parmigiano Reggiano, and braised meats, for example venison.
