The Sfursat 5 Stelle by Nino Negri is made from 100% Nebbiolo grapes - locally called Chiavennasca - harvested late to allow for over-ripening of the fruit on the vine (and therefore a higher sugar concentration and lower water content). After the harvest, the bunches were further dried naturally for about 90 days. The fermentation process took place in steel with long maceration on the skins. Before commercialization, the wine rested for 16 months in French Alliers barriques and an additional 6 months in the bottle. It is the flagship of the Nino Negri winery's production, a result of careful selection of the best bunches. An excellent red from heroic viticulture (so called because practiced on steep slopes) typical of Valtellina.

Nino Negri's Sfursat di Valtellina 5 Stelle presents itself in the glass with an intense ruby red color with garnet reflections. On the nose, aromas of red fruit in jam intertwine with menthol notes and clear hints of dark spices. Soft and deep, on the palate it reveals a delicate tannic texture and a pronounced taste persistence. At the table, it pairs well with cured meats and aged cheeses as well as with structured recipes based on red meats and game.

It has thus become the jewel in the crown of the Italian Wine Group thanks to the prestigious work of the oenologist Casimiro Maule (Oenologist of the Year in 2007), in office until to 2017, and by Danilo Drocco, who leads the winery to date.
